“Mom, what’s for lunch?”

Mac & cheese, chicken nuggets, pbj’s would be on the menu every day if my children had their way (and most of the time they do). But what does Mom eat. I can only eat so much mac&cheese with hot dogs. After preparing lunch for the kids I find myself staring aimlessly into the fridge for some leftover treasure. Lately I have been unsuccessful. Lunch is a complicated meal. If you are single or working full time lunch is the meal that you get together with girlfriends or escape the office. When I was working lunch was my favorite part of the day. Now I dread it. Here are the reasons why…
1. I just barely got the kitchen cleaned up from breakfast, so why dirty it again
2. The toaster oven and I do not get along (I burnt chicken nuggets today and the evidence is still lingering in my house)
3. My kids think that I run a short order kitchen during lunch time
4. I don’t want to cook a full meal for just me.
5. I love going out to eat, but McDonalds is not my idea of going out!

I need help! Any suggestions?

That is so my house!!! I have resorted to sliced meat with cheese and nothing else a lot of the time. Otherwise I just hope dinner is really good before it is time to serve!!!

No suggestions, but I am so with you on the lunch thing. I hate to be treated like a short order chef. Drives me crazy.

Sorry I didn't make it to visit. I wanted to see your house and the baby. I am going to try to give you a call in the near future to catch up.
